If you don't like warm banana choco chip muffins, you're dead to me. If you don't think you can be slightly aroused by muffins, you've never had them apple-smoked. Recipe:
1/3 cup of canola oil 1/2 cup of maple syrup (the good stuff, ya cheapskate) 2 eggs, room temperature 1 cup mashed, ripe banana (2 large bananas) 1/4 cup skim milk 1 tsp of baking soda 1 tsp vanilla extract 1/2 tsp salt 1/2 cinnamon 1 3/4 cup white flour 1/3 cup old fashion oats, plus a pinch for garnish on top 1 tsp white sugar for sprinkling on top 1. Grease your muffin tin like a prized hog. Mix up your ingredients setting aside the extra oats and sugar for later. 2. Soak your apple chips for about an hour. Get 'em in your box (or wrap in tinfoil and poke holes) and on the grill over high heat to get them smoking. 3. Turn your grill down to 300 F. 4. Fill your muffin tin with your batter just below the top of each cup. Top with a pinch of oats and sugar. 5. Put your muffin tin on the grill over low indirect heat and keep it at 300 F. They're done when the tops are browned and a toothpick comes out clean. Get 'em into ya.
